Nothing more delicious than oven roasted asparagus in springtime.  This recipe uses your favorite cajun spice to add a kick to this healthy, low calorie side.

Maybe I’m weird, but I always want a warm vegetable with my meal.  Cold salads always seem to leave something to be desired.  I never get tired of roasted vegetables, especially roasted asparagus.

Inspiration came from our local farmer’s market. Asparagus is in season, and it was offered by several vendors at the Farmer’s market this week. I try to always jump at the chance to eat seasonally and locally!

I particularly love this recipe because it is easy peasy and gives me an excuse to pull out my favorite southern spice blend.  I used this:

Really, you could any spice blend you prefer!


TIP! Don’t cut your asparagus. If you bend it in half, it naturally breaks at the point where it turns from tender to tough.

Ingredients
-One bundle of asparagus
-Your favorite cajun spice
-Cooking spray

Instructions
1. Preheat oven to 350 degrees
2. Wash asparagus and bend in half to snap off stalk.
3. Snap into small, bite-sized pieces.
4. Spread asparagus pieces on a large cookie sheet.
5. Spray with cooking spray and dust with Cajun spice as desired.
6. Bake for 10 minutes or less depending on your oven and how thick your spears are. Stir half-way through. The tops of the spears turn golden brown when stirring half way through.
7. Enjoy!
